How To Marinate Minced Pork – The Chinese Way

Ever wondered why you can never get that tender and juicy flavor in your home cooked minced pork just like the hawker’s and food court uncles in Singapore?  Here’s my recipe and how to make it right. You’ll never can go wrong if you follow these few simple steps here.
One other very important factor other than just following these steps is the choice of your pork. Of course, if you choose the fattier parts it will even taste better, however, if you are a health conscious  person, you can try this with lean pork cut too, but it may not give you that extra oomph feel when you bite into it. Well enough of talking, let’s do some woking now.
Ingredients:
  • Minced Pork  ( obvious, but what I like is, after choosing the pork, I will ask the butcher tominced it twice, but some people actually ask for it to be minced three times, well, I think twice is enough)
  • Pepper
  • Soy Sauce,
  • Corn Flour,
  • Baking soda
  • Chicken stock/ or chicken powder
  • Water
  • Cooking oil
Method:
  1. Mix minced pork well with 1 to 2 tsp of Soy Sauce (Do this first)
  2. Add 1 shake or 2 of pepper, 1 flat tbl of corn flour, 3/4 tsp of baking powder
  3. blend these with the minced pork.
  4. Add 1-2 tbl of chicken stock, or 3/4 tsp of chicken powder or just water if you prefer.
  5.  Mix then well in the bowl.
  6. Let it stand for 15 mins, or you may leave them in the fridge for later use.
That’s it.
